Place butter in microwave and heat in microwave for 30 seconds until mostly melted. Stir in apples.
2 tablespoon butter, ¼ cup grated apple
Add lemon juice, and vanilla extract and stir to combine.
½ teaspoon fresh lemon juice, ¾ teaspoon pure vanilla extract
Stir in brown sugar, followed by milk.
2 tablespoon light brown sugar, ¼ cup milk
Sift in flour, baking powder, and apple pie spice and stir to combine.
½ cup all-purpose flour, ½ teaspoon baking powder, ½ teaspoon apple pie spice
Microwave on HIGH for 1 minute 30 seconds, or until cake is set (see note).

Cook time: Note that microwave ovens vary, so your cake may cook a bit more quickly or take a bit longer to cook completely. I recommend checking it after 60 seconds and adding more time in 15-30 second intervals until it's cooked through. Your cake should be set in the middle, although it may still be a little moist on top.
