Spread tomatoes, onion, mushrooms, and garlic cloves evenly in a 9 x 13 baking pan or casserole dish.
1 pint cherry or grape tomatoes, 1 red onion, 5-7 cloves garlic, 1 cup sliced mushrooms
Place goat cheese log in center of dish, surrounded by other ingredients.
8 oz. soft goat cheese
Drizzle with olive oil and add salt and pepper to taste. Toss to coat.

Bake in preheated oven for 30-35 minutes.
Meanwhile, boil pasta in well-salted water until al dente, reserving 1 cup of pasta water just before draining.
