This confetti cheesecake bars recipe is perfect for a celebration! Baked funfetti cheesecake recipe is so easy and fun -- sprinkles, cookie dough, and a delicious cheesecake layer! It's the perfect dessert for a special occasion and one of my favorite things!
Preheat oven to 350°F. Grease a 9x9 square baking pan and line with parchment paper.

Press 8 cookie dough sections (or about ⅔rds of the dough) evenly into the bottom of the pan.
16-18 oz Confetti Cookie Dough
In the bowl of a stand mixer or with a hand mixer, beat softened cream cheese until fluffy.
8 oz cream cheese
Beat in sugar, egg, and vanilla until creamy. Spread evenly over the cookie base.
½ cup granulated sugar, 1 large egg, ½ teaspoon pure vanilla extract
Break remaining cookie portions into small pieces and scatter over cheesecake layer. Top with additional sprinkles, if desired.
16-18 oz Confetti Cookie Dough, extra sprinkles
Bake at 350°F for 35 minutes, or until cheesecake is set and cookie topping is slightly golden. Cool completely before slicing into bars.

Storing and freezing: Because of their cheesecake layer, these bars should be stored in an airtight container in the refrigerator. They can also be frozen for up to 3 months.Variations: Try this recipe with different types of cookie dough for fun and easy variations!
