Instructions
Preheat oven to 350ºF. Spray an 8.5 x 4.5-inch loaf pan with baking spray and line with parchment paper.
In a large bowl, whisk together mashed banana and brown sugar until well-combined.
4 medium bananas,
¾ cup dark brown sugar
Add eggs one at at time. Stir until smooth.
2 large eggs
Fold flour in gently into wet ingredients until just combined.
2 cups self-rising flour
Pour mixture into prepared loaf pan and smooth evenly.
Bake in preheated oven for 45 minutes, or until a toothpick entered in the center of the loaf comes out clean.
Cool at least 15 minutes before slicing. Serve warm or room temperature.

Optional Ingredients:
Butter
- you can replace one of your bananas with ½ cup of butter.
Vanilla
- add ½ teaspoon pure vanilla extract if you like.
Cinnamon
- add up to ½ teaspoon of ground cinnamon

- you can never go wrong with chocolate! Half a cup of any kind of chocolate chips you like go perfectly in this banana bread.
Nuts
- add in ½ cup of walnuts or pecans for a delightful buttery crunch!
Peanut butter
- replace one of the bananas with ½ cup of peanut butter for a delicious flavor combination!
