In a large bowl, whisk melted butter with sugars until mixture is combined. Add egg, then vanilla, and whisk again until smooth and fluffy.
½ cup light brown sugar - packed, ¼ cup granulated sugar, ½ cup unsalted butter , 1 large egg , 1½ teaspoon pure vanilla extract
Sift in flour, cornstarch, baking soda, and salt. Fold dry ingredients in until just combined.

Fold in chocolate chips. Cover bowl and place in fridge to chill for 30 minutes to an hour.

Preheat oven to 375°F and line a large baking sheet with a silicone liner or parchment paper.
Use a medium cookie scoop to scoop out portions of dough and wrap dough around two small pieces of milk chocolate. Roll in your hands until it forms a ball around the chocolate.

Place dough balls onto prepared baking sheet at least 2 inches apart. Bake in preheated oven 10 minutes, or until tops of cookies are set and edges are golden brown.
Let cookies cool on baking sheet for 10 minutes, then transfer to a wire rack to cool further. Cookies are best served a little warm.
