    Matcha Brownies with Milk or Dark Chocolate

    These aren't regular brownies -- are the best matcha brownies! Dark chocolate or milk chocolate are a great complement to the flavors of the matcha green tea powder! These green tea brownies are a unique and unexpected sweet treat that everyone will love, with a fudgy texture and a crackly top!

    Because they're made with matcha powder instead of cocoa powder, they're more like matcha blondies, along the same lines as my pumpkin blondies or my brown butter banana blondies, but even better for matcha lovers!

    What do matcha brownies taste like?

    These chewy matcha brownies combine the earthy flavor of matcha, which is a Japanese green tea powder, all wrapped up in a fudgy brownie! Matcha is made from specially-grown whole green tea leaves that are steamed, dried and stone-ground into powder, imparting a stronger green tea flavor than regular green tea.

    It dates back to the 12th century in Japan, where it has become part of the revered practice of the tea ceremony.

    Higher vs. Lower Quality Matcha Powder

    Matcha comes in three grades: ceremonial grade matcha is the highest quality matcha, is used for the Japanese tea ceremony, and is a bright, vibrant green color. Premium grade matcha is also high quality, but its standards are not as stringent as ceremonial grade, so it is a more affordable option for lattes and other everyday drinks and is the best matcha powder for baking. 

    Culinary grade matcha is a lighter green, with a slightly more bitter grassy flavor. For our purposes, a good culinary-grade matcha works because it's affordable enough to be used in cooking and baking recipes like this matcha brownie batter, but you can definitely use higher quality matchas as well.

    Does matcha and chocolate go together?

    Absolutely! Brown sugar and chocolate chips balance out the bitter matcha flavor perfectly! Plus, you can make these into white chocolate matcha brownies and the matcha flavor goes so well with the sweetness of the white chocolate!

    Fudgy Matcha Brownies Ingredients

    • melted butter - I like to use salted butter, but if you use unsalted butter you can just add ½ teaspoon of salt with your dry ingredients.
    • light brown sugar - adds a richer sweetness and chewy texture to these fudgy matcha brownies. You can also use coconut sugar if you prefer!
    • white sugar - adds sweetness to complement the matcha flavor in this easy brownie recipe!
    • eggs and egg yolk - your eggs should be room temperature, to help make it easier to mix your wet ingredients.
    • vanilla - be sure to use a higher quality pure vanilla extract. Or better yet, check out my post on how to make vanilla extract at home with just 2 ingredients!
    • all purpose flour - be sure to measure your flour correctly, preferably by weight using a kitchen scale, which is the best way to get an accurate measurement of dry ingredients.
    • matcha powder - instead of using cocoa powder like in a classic brownie recipe, we'll use good quality culinary grade matcha.
    • chopped baking chocolate - I used Ghirardelli bittersweet chocolate, but you can also use milk chocolate. You can also use white chocolate chips to make matcha white chocolate brownies!

    Equipment

    You'll want a 9x9 baking dish to bake up these fudgy matcha brownies! I also recommend a whisk, a wire rack to cool your brownies, and parchment paper to line your pan. And as always, I recommend using a kitchen scale to measure your flour by weight instead of measuring it with a measuring cup.

    Are matcha brownies healthy?

    Although matcha has been associated with many health benefits, you should check with your personal nutrition expert to find out if these brownies work for your dietary needs. You can also make them with coconut oil, vegan butter, or chia eggs to avoid eggs or dairy.

    Matcha Brownies - Vegan Option

    You can make these fudgy matcha brownies vegan if you use vegan butter, dairy free chocolate, and swap the eggs for Bob's Red Mill Egg Replacer. Also, make sure that the sugar you use is vegan friendly as well.

    Instructions

    These fudgy matcha brownies are so easy to make! Here are the steps -- see the recipe card below for more detailed instructions and ingredient measurements:

    1. In a large bowl, whisk together melted butter and sugars.

    2. Add egg and vanilla and whisk well until smooth.

    3. Sift in flour and matcha powder and fold together until just combined.

    4. Fold in chopped chocolate.

    5. Line a 9x9 square pan with parchment paper and spread matcha batter into prepared pan.

    6. Bake! Let cool in baking pan at least 15 minutes before removing to a cooling rack to cool completely. Then use a sharp knife to cut into bars.

    Hint: Enjoy these fudgy matcha brownies while they're still a little warm and gooey -- even better topped with vanilla ice cream!

    Substitutions

    You can make this chewy matcha brownies recipe fit your dietary needs:

    • Dairy-Free - swap out the butter for vegan butter and be sure to use dairy free dark or white chocolate!
    • Gluten Free Option - you can make these matcha brownies gluten free with a 1:1 gluten free flour!

    Matcha Brownies with White, Dark, or Milk Chocolate

    What I love about this recipe is that you can make these dark chocolate matcha brownies without white chocolate, like I do below, or you switch it up to your preference:

    • Matcha brownies with white chocolate - swap the chopped dark chocolate or dark chocolate chips for white chocolate chunks! Adds more of a sweet, vanilla flavor and a lovely color contrast.
    • Matcha brownies with milk chocolate - the milk chocolate is a great compromise between the rich chocolate flavor of the dark chocolate and the sweetness of white chocolate.
    • Matcha Brownies - No Chocolate Version - if you don't want any chocolate at all, these matcha brownies are still perfect for you! Just omit the chocolate and follow the rest of the recipe as usual.
    • Matcha Brownies with Frosting - add even more chocolatey goodness with my Chocolate Fudge Frosting recipe!

    Storage

    Store your brownies in an airtight container for up to two days at room temperature, or up to 5 days in the fridge. You can also freeze them for up to two months.

    Top Tip

    Don't overbake your brownies if you want that fudgy, gooey texture like my Biscoff Brownies. Begin to check them for doneness after 18-20 minutes (or sooner if you don't use chocolate chunks).

    Ingredients

    • 1 cup (227 g) salted butter - melted and slightly cooled
    • 3 large eggs - room temperature
    • 1 large egg yolk - room temperature
    • 2 teaspoon (10 ml) pure vanilla extract
    • ⅔ cup (133 g) granulated sugar
    • 1 cup (220 g) brown sugar - packed
    • 2 tablespoon (30 ml) matcha powder - good quality culinary grade, or ceremonial grade; plus more for dusting
    • 1⅓ cup (167 g) all-purpose flour - measured by weight with a kitchen scale or with the spoon-and-level method
    • 1 cup (132 g) bittersweet baking chocolate - (optional) chopped -- feel free to use milk, dark, or white chocolate or chocolate chips

    Instructions

    • Preheat the oven to 350°F. Grease a 9x9" baking pan with cooking spray and line with parchment paper, leaving an overhang for easy removal of the matcha brownies.
    • In a large bowl, whisk together melted butter and sugars until smooth.
      1 cup salted butter, 1 cup brown sugar, ⅔ cup granulated sugar
    • Add in eggs and egg yolk, as well as vanilla extract, and mix well.
      3 large eggs, 1 large egg yolk, 2 teaspoon pure vanilla extract
    • Sift matcha powder and flour into the bowl and fold with rubber spatula until just combined.
      2 tablespoon matcha powder, 1⅓ cup all-purpose flour
    • Fold in chopped chocolate, if using.
      1 cup bittersweet baking chocolate
    • Bake for 20-25 minutes or until center is set.
    • Cool in pan for 15 minutes and then transfer to a wire rack to cool completely.
