    Chocolate-filled cookies are like a party in your mouth! They're a fun twist on classic chocolate chip cookies: super yummy cookies with a chewy texture and a gooey chocolate center that's just to die for.

    It's like the best of both worlds – soft cookies on the outside and a rich, melted chocolate surprise on the inside. You've gotta try 'em -- they're sure to be your new favorite cookies!

    Easy Chocolate Filled Cookies Ingredients

    These easy chocolate filled chocolate chip cookies are the perfect treat, and they're so simple to make with just a handful of basic ingredients. You can see the full ingredient list with measurements below in the recipe card, but here's what you'll need to grab:

    • light brown sugar - packed light brown sugar adds a caramely sweetness, and helps create a chewy cookie!
    • granulated sugar - to add sweetness and structure, we'll mix in some granulated white sugar to our cookie dough.
    • butter - we'll use melted unsalted butter for this recipe.
    • egg - make sure your egg is at room temperature before mixing it in.
    • vanilla - make sure you use a good-quality pure vanilla extract. Or better yet, check out my post on how to make vanilla extract at home with just 2 ingredients!
    • all purpose flour - measured by weight with a kitchen scale, or if you use a measuring cup be sure to use the spoon-and-level method. See my post on Measuring Baking Ingredients Accurately for Better Results for details!
    • cornstarch - thickens the cookies a bit and gives them a softer texture.
    • baking soda - reacts to the acid in the brown sugar to give just enough lift to this recipe!
    • salt - throwing in a bit of salt really amps up the flavors in this cookie recipe!

    What is the best chocolate for cookies?

    I tend to use a combination of chocolates for these chocolate filled cookies! I use semi-sweet or dark chocolate chips or chocolate chunks for the cookie dough, and Hershey's or any milk chocolate you like for the chocolate filling! And chocolate chip lovers will definitely want to try my Chocolate Chip and Marshmallow Cookies!

    Equipment

    You'll need a medium cookie scoop to scoop out even amounts -- it should be about 2.5 tablespoons to create larger cookies. You'll also want a kitchen scale to make sure that you measure your flour correctly, a large bowl for mixing the cookie dough, and a baking sheet and parchment paper to bake up this chocolate filled cookies recipe! And you'll also want a cooling rack to cool your baked cookies! I love this three-tiered one from Wilton!

    How to Make Chocolate Stuffed Cookies

    This chocolate filled chocolate chip cookies recipe is so simple to make! You can see the full instructions below in the recipe card, but here are the basic steps:

    In a large mixing bowl or the bowl of a stand mixer, whisk together sugars and melted butter until smooth. Add in egg and vanilla.

    Sift in dry ingredients: flour, cornstarch, baking soda, and salt and fold to combine with a rubber spatula.

    Fold in chocolate chips and chill dough in the fridge.

    Scoop cookie dough balls and stuff each ball of dough with two chocolate pieces. Bake on prepared cookie sheet until golden brown and cool on a wire rack.

    Hint: don't skip the dough chill time! If you do, your dough will spread too much in the oven.

    Storage

    These chocolate filled cookies keep well at room temperature in an airtight container for up to 3 days, or frozen for up to 3 months.

    Top Tip

    Enjoy your cookies while they're still a little warm -- as the chocolate cools, it hardens, which can make the cookies less soft and gooey. These soft chocolate cookies are perfect with a glass of milk or a scoop of ice cream!

    Frequently Asked Questions

    Do you flatten chocolate chip cookies before baking?

    You don't need to flatten these chocolate filled chocolate chip cookies because they'll flatten out a bit on their own in the oven! They won't get too flat though, thanks to the chilling step!

    How long should you chill cookie dough before baking?

    I'd recommend chilling these cookies for at least 30 minutes to an hour, to ensure that the dough doesn't flatten out too much while baking!

    What happens if you don't chill cookie dough?

    Your cookies will end up very flat and spread out, and the chocolate inside may leak out and burn. I highly recommend that you chill your cookie dough!

    Ingredients

    • ½ cup (110 g) light brown sugar - packed
    • ¼ cup (50 g) granulated sugar
    • ½ cup (114 g) unsalted butter - melted
    • 1 large egg - room temperature
    • 1½ teaspoon (7 ml) pure vanilla extract
    • 1⅓ cup (167 g) all purpose flour - measured by weight with a kitchen scale or fluffed using the spoon-and-level method
    • 2 teaspoon (4 g) cornstarch
    • ½ teaspoon (2 g) baking soda
    • ½ teaspoon (3 g) salt
    • ¾ cup (135 g) semi-sweet chocolate chips
    • 24 milk chocolate bar pieces - I used Hershey's

    Instructions

    • In a large bowl, whisk melted butter with sugars until mixture is combined. Add egg, then vanilla, and whisk again until smooth and fluffy.
      ½ cup light brown sugar - packed, ¼ cup granulated sugar, ½ cup unsalted butter , 1 large egg , 1½ teaspoon pure vanilla extract
    • Sift in flour, cornstarch, baking soda, and salt. Fold dry ingredients in until just combined.
      1⅓ cup all purpose flour , 2 teaspoon cornstarch, ½ teaspoon baking soda, ½ teaspoon salt
    • Fold in chocolate chips. Cover bowl and place in fridge to chill for 30 minutes to an hour.
      ¾ cup semi-sweet chocolate chips
    • Preheat oven to 375°F and line a large baking sheet with a silicone liner or parchment paper.
    • Use a medium cookie scoop to scoop out portions of dough and wrap dough around two small pieces of milk chocolate. Roll in your hands until it forms a ball around the chocolate.
      24 milk chocolate bar pieces
    • Place dough balls onto prepared baking sheet at least 2 inches apart. Bake in preheated oven 10 minutes, or until tops of cookies are set and edges are golden brown.
    • Let cookies cool on baking sheet for 10 minutes, then transfer to a wire rack to cool further. Cookies are best served a little warm.
