Sugar Cookie Almond Milk Latte - Starbucks Copycat Recipe
The most wonderful time of the year gets even more wonderful thanks to this iced sugar cookie latte! This new flavor was part of the Starbucks Holiday drinks 2021 release and I couldn't wait to try it out at home! According to Starbucks, the Iced Sugar Cookie Almondmilk Latte is made with blonde espresso, almond milk, sugar cookie-flavored syrup, and sprinkles! Sounds like a perfect treat for the season, and so simple to replicate at home!
Does Starbucks have a sugar cookie drink?
It sure does -- and it's delicious! My all-time favorite has always been the peppermint mocha, but with this sugar cookie almond milk latte Starbucks might have changed my mind! I'm a huge sugar cookie fan and the flavors of vanilla and almond in the sugar cookie syrup are so perfect for this time of year! Add in the festive sprinkles and I'm sold! And if you haven't tried the Starbucks sugar cookie latte yet, this copycat recipe will give you all those same flavors!
Starbucks Sugar Cookie Syrup Recipe and Substitutes
I based my version of the Starbucks sugar cookie syrup on the buttery, vanilla and almond flavors that you find in all your favorite sugar cookie recipes! So it starts as a simple syrup and we're adding in vanilla extract, butter extract, and almond extract. Plus, for the hot version of this recipe we're adding white chocolate chips for even more sugar cookie flavor!
Hot version or Iced Version
The question is -- should you make an iced sugar cookie almond milk latte or a hot one? I've had both, and I can't decide! But the good news is that I'm including both versions in the recipe card below so that you can try them both out.
They're very similar, but in the hot version you'll have the option of adding a few white chocolate chips to your cup before you add the hot espresso, sugar cookie syrup, and frothed milk.
Ingredients for Sugar Cookie Almond Milk Latte
- granulated sugar and water - we'll turn this simple syrup into our version of the Starbucks sugar cookie syrup recipe!
- vanilla extract, almond extract, and butter extract - the classic flavors of your favorite sugar cookies! I used my homemade vanilla extract recipe for this latte, plus Watkins almond extract and butter extract.
- espresso - if you can brew some espresso at home, that'd be ideal -- it should be a lighter roast like Starbucks Blonde Espresso or Nespresso Volluto. Or you can use a darker roast blend of regular coffee.
- unsweetened vanilla almond milk - I'd recommend an unsweetened vanilla almond milk so that your latte doesn't come out too sweet.
- white chocolate chips - these are optional, but you can add some white chocolate chips to the mug for the hot version of this latte to add even more creamy vanilla flavor! This works better with high-quality white chocolate chips, or even better, chunks of white chocolate, so that it'll melt more smoothly.

- ice - absolutely crucial for the iced version of this sugar cookie almond milk latte!
Equipment Needed
First, you'll want something to make your espresso. I love my Original Nespresso! Then, you'll need a saucepan to make your sugar cookie syrup, and a handheld milk frother to make your almond milk foamy. Here's the one I use -- I love that it comes with a stand to store it when it's not in use. And if you're making the iced version of this Christmas cookie latte recipe, you'll want a straw to stir and drink your creation!

So if you're making at home, you can use their Blonde Espresso Nespresso capsules or a light-bodied espresso roast, or if you're swapping in regular brewed coffee opt for a dark roast like the Starbucks French Roast.
The Starbucks sugar cookie almond milk latte, according to their website, is made with sugar cookie syrup, almond milk Starbucks Blonde Espresso and topped with green and red cookie sprinkles. It's inspired by spritz cookies, so it's meant to have flavors of vanilla, almond, and buttery cookies.
This Starbucks sugar cookie almond milk latte has a slight nutty flavor from the almond milk and the almond extract. It's lightly creamy, and refreshingly sweet.
Absolutely -- just swap your favorite dairy milk or another plant milk that you prefer.
I have yet to try this option, but if you want to try this without the added step of making your own sugar cookie syrup, this sugar-free sugar cookie syrup looks like a great alternative!
I would save the coffee for just before serving, but you can definitely make a big batch of the sugar cookie syrup and save it in the fridge for up to five days! Then just brew your espresso and pour in the sugar cookie syrup and milk and you'll have this yummy, festive latte in a snap!

Ingredients
- ¼ cup granulated sugar
- ¼ cup water
- ¼ teaspoon pure vanilla extract
- ½ teaspoon almond extract
- 7-10 drops butter extract - optional
- 2 oz freshly brewed espresso - or ½ cup dark roast brewed coffee
- 1 cup unsweetened vanilla almond milk
- ice
- sprinkles - optional
- 1 tablespoon white chocolate chips or chopped white chocolate - optional; for hot version
Instructions
- To make sugar cookie syrup, heat water and sugar in a saucepan until sugar is dissolved and mixture is clear. Remove from heat and add vanilla, almond, and butter extract.¼ cup granulated sugar, ¼ teaspoon pure vanilla extract, ½ teaspoon almond extract, 7-10 drops butter extract
To Make a Hot Sugar Cookie Almond Milk Latte
- Fill a 16-ounce glass with ice. Pour espresso over ice, followed by 2-4 tablespoon of sugar cookie syrup.2 oz freshly brewed espresso, ice
- Fill remainder of cup with almond milk, top with sprinkles, and enjoy!sprinkles
- Prepare sugar cookie syrup as listed above; set aside. Heat almond milk until scalded (hot, but not yet boiling) and use a milk frother to froth the milk to your preference.
- Add white chocolate chips to the bottom of a mug. Pour in hot coffee and 2-4 tablespoon of hot sugar cookie syrup and stir to melt chocolate chips slightly. Add in frothy almond milk, top with sprinkles and enjoy!1 tablespoon white chocolate chips or chopped white chocolate
