This is a quick lunch, dinner or snack recipe that is ideal for a busy weekday meal. If you’ve ever picked up those rotisserie chickens they have in the deli section of the supermarket, or if you’ve got some leftover cooked chicken pieces to use up, this rotisserie chicken salad recipe is for you!
This recipe is inspired by the chicken salad at one of my favorite spots in my hometown of Woodmere, Ohio (just outside of Cleveland): Davis Bakery & Deli. I remember back in middle school, my mom would go there early on weekday mornings to pick up bagels for breakfast, and I always loved stopping by to get some of their chicken salad by the pound. I loved the unmistakable flavor of dill, and so for years now I’ve been making my rotisserie chicken salad with fresh dill!

This rotisserie chicken salad recipe is the best chicken salad recipe I’ve found — it’s full of flavor and savory chunks of roasted chicken, but it’s almost no work! No stovetop, no oven, and no countertop appliances! This chicken salad recipe is just 6 ingredients (including salt and pepper) and it’s ready in less than five minutes!
All you have to do is combine all your ingredients in a big bowl, stir them up so that everything is well coated, and you’re ready to serve!
Serving Ideas and Variations
This rotisserie chicken salad recipe can be served in lots of ways! My favorite way to enjoy it is on top of crackers or kettle-cooked potato chips. You can also serve it in a sandwich, of course, or bake it into puff pastry shells for an elegant party appetizer! I’ve even used this rotisserie chicken salad recipe to make tea sandwiches for an afternoon tea I held with friends. It’s always a huge hit!
You can also use this rotisserie chicken recipe for your leftover turkey! It’s perfect as a snack after Thanksgiving to turn those leftovers into something delicious.

Equipment you may need
Ingredients
- 2½ cups rotisserie chicken meat with skin – chopped, see note
- ½ cup yellow onion – finely chopped
- 2 tbsp fresh dill – finely chopped
- ½ cup mayonnaise – full-fat or light, whichever you prefer
- salt and freshly cracked pepper – to taste
Instructions
- Combine chicken, onion, dill, and mayonnaise in a large bowl and toss to coat.
- Season with salt and pepper to taste. Serve immediately or chill until ready to serve.
