The real Cookie Monster's cookies are made of rice crackers that are decorated to look like cookies. But if he could, Cookie Monster would rather eat these!
Cookie Monster Cookie Ingredients
You'll see the full measurements below in the recipe card, but here's what you'll need to pick up for these delicious cookies:
- unsalted butter - melt your butter, then let it cool for a bit before starting your batter.
- light brown sugar and granulated white sugar - this combination of
- egg - make sure your egg is room temperature so that it doesn't harden your butter when you add it in!
- pure vanilla extract - be sure to use a higher quality pure vanilla extract. Or better yet, check out my post on how to make vanilla extract at home with just 2 ingredients!
- all-purpose flour - be sure to use a kitchen scale to measure your dry ingredients to achieve the right texture for these famous cookie monster cookies!
- cornstarch - a little corn starch added to our flour mixture helps create soft cookies!
- baking soda - gives a little lift to these blue cookies!
- salt - I like to add a good amount of salt to offset the sweetness of these cookies.
- blue food coloring - add as much as you need to achieve the perfect blue dough! I like to use gel food coloring, but either type works!
- semisweet chocolate chips and white chocolate chips - this combination is an explosion of sweet and chocolatey goodness!
- chopped Oreo cookies - I love Oreos in everything, especially in this cookie monster chocolate chip cookies recipe!
- mini Chips Ahoy cookies - you can also add in chunks of crispy peanut butter cookies or other cookies you love!
- milk chocolate bars - Hershey bars or other chocolate candies work great! You can also use bittersweet chocolate chunks for a more complex flavor, like in my Matcha Brownies!
- candy eyes - to give these cookies the cookie monster look -- or to give a little Halloween flair!

You'll need a medium cookie scoop to scoop out even amounts -- it should be about 2.5 tablespoons to create larger cookies. You'll also want a kitchen scale to make sure that you measure your flour correctly, a large bowl for mixing the cookie dough, and a baking sheet and parchment paper to bake up this blue cookie monster cookies recipe! Finally, you'll want a cooling rack to cool your baked cookies! I love this three-tiered one from Wilton!
How to make Cookie Monster Cookies (Printable Instructions in Recipe Card Below)
See the recipe card below for detailed instructions and measurements, but here are the basic steps for this easy recipe -- it's very similar to the steps in my Dairy Free Chocolate Chip Cookies recipe!
1. Whisk together melted butter, brown sugar, and white sugar.
2. Add egg and vanilla extract and whisk until smooth.
3. Sift in dry ingredients -- flour, baking soda, and salt and fold in until well combined.
4. Add in blue food coloring, followed by cookie pieces and chocolate chips. Chill dough for one hour.
5. Scoop out medium scoops of dough and fold around two small pieces of milk chocolate, forming into a ball around the chocolate.
6. Bake until golden brown on the bottom and tops are just set. Add more cookies, chocolate chips, and candy googly eyes if you like just after they're done baking!
Hint: Be sure not to over-bake your cookies -- for a softer texture, remove them from the oven when the tops are just barely set, but the cookies are still very soft and look underdone. They'll continue to set as they cool.
Substitutions & Variations
- dairy free - if you prefer, you can use vegan or dairy free butter, as well as dairy free chocolate and chunks of dairy free chocolate chip cookies to make this a dairy free recipe, like my Dairy Free Chocolate Chip Cookies recipe!
- swap out cookies - feel free to swap out the mini Chips Ahoy and Oreo cookies for any other cookies you like! I love the idea of Thin Mints, Milanos, or Nilla wafers!

- ½ cup (110 g) light brown sugar - packed
- ¼ cup (50 g) granulated sugar
- ½ cup (114 g) unsalted butter - melted
- 1 large egg - room temperature
- 1½ teaspoon (7 ml) pure vanilla extract
- 1⅓ cup (167 g) all purpose flour - measured by weight with a kitchen scale or fluffed using the spoon-and-level method
- 2 teaspoon (4 g) cornstarch
- ½ teaspoon (2 g) baking soda
- ½ teaspoon (3 g) salt
- blue food coloring - to preference
- ½ cup (90 g) white chocolate chips
- ½ cup (90 g) semi-sweet chocolate chips
- ½ cup (80 g) chopped Oreo cookies - or similar chocolate sandwich cookies
- ½ cup (118 g) chopped Mini Chips Ahoy cookies - or similar crispy chocolate chip cookies
- 24 milk chocolate bar pieces - I used Hershey's
- candy eyes - optional
Instructions
- In a large bowl, whisk melted butter with sugars until mixture is combined. Add egg, then vanilla, and whisk again until smooth and fluffy.½ cup light brown sugar, ½ cup unsalted butter, 1 large egg, 1½ teaspoon pure vanilla extract, ¼ cup granulated sugar
- Sift in flour, cornstarch, baking soda, and salt. Add blue food coloring and fold in, adding more until desired color is reached.1⅓ cup all purpose flour, 2 teaspoon cornstarch, ½ teaspoon baking soda, ½ teaspoon salt, blue food coloring
- Fold in white and semi-sweet chocolate chips and cookie pieces. Cover bowl and place in fridge to chill for 30 minutes to an hour.½ cup white chocolate chips, ½ cup semi-sweet chocolate chips, ½ cup chopped Oreo cookies, ½ cup chopped Mini Chips Ahoy cookies
- Preheat oven to 375°F and line a large baking sheet with a silicone liner or parchment paper.
- Use a medium cookie scoop to scoop out portions of dough and wrap dough around two small pieces of milk chocolate. Roll in your hands until it forms a ball around the chocolate.24 milk chocolate bar pieces
- Place dough balls onto prepared baking sheet at least 2 inches apart. Bake in preheated oven 10 minutes, or until tops of cookies are set and edges are golden brown.
- Add candy eyes to tops of cookies, along with more chocolate chips and cookie pieces. Let cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.candy eyes

You sure can -- you may need to add a little more blue food coloring to offset the brown butter, but that would definitely add even more deliciousness to these cookie monsters cookies!
They'll stay fresh at room temperature for about three days in an airtight container, but I like to keep these refrigerated and then heat one in the microwave whenever I want one so I can have that gooey chocolate center!
