    If you've had those strawberry shortcake ice cream bars, you might have some idea how yummy this strawberry crunch topping is -- it's that fruity strawberry crunch on the outside of the ice cream bar! It's got a bright, bold strawberry flavor, along with rich buttery vanilla crumbs just perfect for pairing with other desserts. Or if you're like me, you'll be tempted to eat it with a spoon!

    Strawberry Shortcake Crumble Recipe

    This easy strawberry shortcake crumb topping is a no-bake recipe, and only requires three ingredients! It couldn't be easier to make, and you'll be making it so often!

    And the best part is that it's not made with fresh strawberries, so you won't need to worry about whether it's strawberry season! This crunchy crumble is my favorite way to add the perfect balance of strawberry flavor to any strawberry recipes! And if you love strawberry desserts, you've got to try my Strawberry Blueberry Pie!

    How to Make Strawberry Shortcake Crumble with Oreos

    What are strawberry crunchies made of?

    Strawberry crunch topping (strawberry shortcake crumble) is made with just three simple ingredients: Golden Oreo cookies, freeze dried strawberries, and melted butter!

    • freeze-dried strawberries - these are the secret ingredient to making strawberry crunch crumbles! They add intense strawberry flavor and color without adding the excess moisture that fresh strawberries would. That way our strawberry crunch topping is the perfect texture! And if you love baking with berries, try my Blackberry Coffee Cake!
    • Golden Oreos - I use a full 14-ounce package of Golden Oreos (or another similar type of vanilla sandwich cookies). It ends up being about 36 cookies. And if you like Oreos, try my Oreo Pound Cake!
    • salted butter - we'll bring these strawberry shortcake crumbs together with some melted butter. Using salted butter helps to bring out the flavors in our strawberry crunch topping, but if you only have unsalted just add a few pinches of salt to taste.

    Strawberry Crunch Topping Recipe with Jello

    If you prefer, you can replace the freeze dried strawberries in this recipe with strawberry jello mix. I personally prefer using the freeze-dried fruit because it adds a more naturally sweet strawberry flavor, but both can work!

    Equipment Needed

    I use a food processor to make this no bake strawberry crunch topping, and it was so easy! Or if you don't have a food processor, you can still make this strawberry crunch topping super easy by crushing the strawberries and cookies with a gallon-size ziploc bag and a rolling pin.

    How to Make Strawberry Crunch Topping with Freeze Dried Strawberries

    It's so easy! Just toss your freeze-dried strawberries and cookies into your food processor and pulse once or twice. Add in your melted butter and pulse again until the mixture reaches the consistency you like!

    If you don't have a food processor, just place the strawberries and cookies in a gallon-size freezer bag and use a rolling pin to crush them into coarse crumbs. Then transfer them both to a bowl and stir in your melted butter. That's it!

    Store your strawberry shortcake crunch at room temperature in an airtight container. You can also freeze this homemade strawberry crunch for use in recipes later!

    Can I make this a vegan strawberry shortcake crumble?

    You sure can! Since Golden Oreos are considered by many in the vegan community to be vegan, you can just swap out the butter in this recipe for vegan butter and you're good to go!

    Why is it called shortcake?

    Shortcake refers to a cake or biscuit that is crumbly or crispy. The "short" part of the name refers to the crisp texture, which is usually achieved by adding butter or another type of fat. In this strawberry shortcake crumb topping, we're not using a traditional shortcake, but it's more inspired by the beloved Good Humor Strawberry Shortcake frozen treat!

      Can you do this in cups and ounces and things like that because I don’t do grams micrograms kilograms I live in America. We’re not metric here.

        I also live in the US -- the freeze-dried strawberries and Oreos are listed in ounces because that's how they're listed on the package here -- you need one small package of freeze-dried strawberries (1.2 ounces) and one regular-sized package of Golden Oreos (14.3 ounces).

      Omg, this strawberry crumb topping is GOLD!!! I wanted to make a big batch of this so I have it on hand when either I'm making a dessert or when my grandkids come over and want a little treat with some ice cream.         You definitely could, but I'm not sure how well the color of the freeze-dried strawberries would hold up through baking. My suggestion would be to add it as a topping when decorating the finished cupcakes, like with my Strawberry Crunch Cupcakes!

      Although late to the party to comment (I'll try to do better) Lol, this recipe has now become my go-to when I make my strawberry crunch cake. I've printed the recipe several times but can't find it when I need it! What I love about it is that it doesn't require Jello and I'm learning that vegans don't eat food with Jello in it. So, please include this recipe in your cookbook!!

        I think it's worth a shot, but the texture and sweetness may not be the same, since the Lorna Doones don't have any cream filling. You could try adding a little extra butter?
